Hi Siobhan, congratulations on achieving a vigorous starter! We're not big fans of the float test for gauging starter readiness or ripeness, so I wouldn't worry about this. Your starter is ripe and ready to use in your baking when it's at its peak of rising, or just beginning to fall after having been fed at room temperature. Happy baking!
