Hi Jason, protein and starch are inversely proportionate in wheat flour, which means the higher the protein content, the lower the starch. Since starch is what your starter consumes and ferments, it will be getting a slightly better meal with unbleached all-purpose flour. That being said, if all you have available to feed your starter is bread flour, it should work just fine.
