Hi Ashley, the fact that your starter is getting bubbly and rising even a little bit is very promising. I have created a sourdough starter with just unbleached all-purpose flour and it ended up working fine, so I would encourage you to stay the course. While you could go back to once a day feedings, I think you're far enough along in the process that it might make more sense to continue on as you're doing and try to be patient. You're starer will eventually begin to rise predictably! Good luck, and let us know how it goes!
