I think I'm having issues with my starter build. Day 3A everything was bubbly and had risen. To this point I had used KAF Organic Wheat Flour. I did my feed/discard with AP flour and all looked good. Day 3B I used AP flour again for the feed/discard and everything had changed. There was a layer of hooch on top, no rise, no bubbles, and was very thin. Day 4 came and I was so busy that I only did one feed/discard. Again it had the same characteristics as Day 3B. What did I do wrong? How do I correct it? I am using bottled water. I am using a scale for measuring. I'm using a large mason jar with the lid tightly closed. Could that be the issue? The temperatures in the house haven't changed. The starter always mixes and seems thick and ok right away after the feed/discard process. It is when I go to do the next feed/discard that I see that things seem to have gone all wrong. The wheat flour I bought was a 2lb pkg as that was the only bag I could find. Since I am building 2 starters, I switched to AP flour as I was able to purchase that through our local club. Just a little frustrated with this silly starter. When is your live starter coming back in stock? I didn't have good luck with trying this recipe the first time but I didn't have these issues. I really just wanted to order the live kit this time but gave up waiting and said "give it a try. You could have had it done by now." Ugh. Thanks.
