I’ve had a starter now for a while that I made. I feed it in the ratio of 1:1:1 of starter, flour and water. I feed it every 12 hours and it doubles but does not triple- but most recipes say it should. The funny thing is I used to feed by volume and it used to result in a much thicker consistency but it used to triple every 8 hours! The only reason I stopped was because the discard was way too much when I fed by volume. Either way, I want to know what I’m doing wrong. I feed it with 50/50 of whole wheat and AP flour.
