I've had a starter going for nearly 3 years, one that I started by following the directions here on KA. I have been keeping it in the fridge and feeding once a week, or sometimes every 2 weeks. In the last year, it has gradually been taking longer and longer to rise. At first it would more than double in 3 - 4 hours. Then it started extending to 5 hours, then 7 hours, now 12 hours. I take 4 oz of starter, add 4 oz of flour, and 1/2 cup of bottled water to feed. This has been the same routine all along. I use a spoonful of white whole wheat in the flour, but the rest is KA All Purpose. What's going on?
