sigh. I've attempted to make a starter with organic unbleached flour and it appears as if I've made paste. It is heavy and very sticky. I covered it with a dish towel for the first several days and now have an inverted plate. I think it needs more water as no bubbles are coming up because I think it's too thick. It's about 5 or 6 days old and I've cut back on flour and added a smidge more water trying to get it loosened up. It does taste very sour so, I think something good is happening.
