Hi Nat, the fact that you're seeing more activity and bubbles throughout is definitely very promising, so try not to be discouraged! If you happen to have your starter stored in a wide bowl or container, this could be making it more difficult for you to see the starter "double in size." That kind of growth will be more evident in a straight-sided glass jar that is taller than it is wide. You'll also want to be sure that the 1:1:1 ratio of ingredients in your starter is by weight rather than volume. Equal parts by volume will give you a very wet starter that will have more difficulty rising. If you're not seeing any rise at all, I would consider switching to a once a day feeding routine until your starter begins to rise predictably, and then return to twice a day feedings. However, if you're seeing some rising, this is evidence that the yeast is beginning to do its thing, so I would just be patient and trust that your starter will continue to move in the right direction.
