Hi Barb,
I only had Bob's Red Mill Spelt flour to make my sourdough starter (Pandemic panic at the grocery stores cleared out the shelves and bulk bins of any flour), so that is what I used. I started it 7 days ago feeding it once a day and it was bubbling and then today it thinned out to pancake consistency and didn't bubble at all. Had a bit of hooch, but not much. I put in a couple of tablespoons of flour w no water.
I'm just wondering if you have had any success with spelt flour sourdough and if you can give me any advice.
