Hi. I recently started a starter. The first day I used whole wheat flour with equal parts water. Day two I used Unbleached bread flour and equal parts water. By day three the starter was doubling in size very quickly with not the greatest smell. I started feeding every twelve hours. It is now day 6. The starter no longer rises but does have some bubbles on the surface. The smell is fine almost like a sourdough smell. I am wondering if I should keep feeding it every twelve hours and if it’s ok it has not started to rise yet with only a little bit of activity on the surface. Thanks
