Hi Kathleen, once your starter is rising predictably after a feeding (for our starter it usually takes about 6-8 hours for it to double in size after a feeding), and has a pleasant aroma, then you should be good to go. The stainless bowl wouldn't have caused any harm to your starter, but it is harder to see the starter double in size in a wide bowl as opposed to a taller glass jar. If you're doing our normal maintenance feeding routine of 4 ounces/113g each of starter, flour and water, then this should fit well in a wide mouth quart sized mason jar.
