Hello, I've been working on my starter - day 15 - (just keep feeding was the mantra) but it just bubbles without any noticeable rise. It smells sour and I made my first loaf today not expecting anything and it tasted nice and sour but was essentially a dense hockey puck with few bubbles here and there. I've been running some side experiments with ~75% hydration as I though it may have been too thin to trap the bubbles but it seemed to end up roughly the same. Some details - 50/50 of whole wheat and AP flour, 0.5:1:1, fed every 24 hrs (I was feeding it 12 hrs but with so little activity it was suggested that I was overfeeding), does get coldish at night, had the classic day 3 super rise, water is chlorinated so I use water that's been sitting out. Any tips/suggestions? Also wondering - why does the starter thin out over time? Thanks!
