Hi Andi, every time you switch up your starter feeding routine (like type of flour fed, the frequency of feedings, and the size of the feedings) your starter will need time to adjust. Since you've gone back and forth a few times with different routines, I would recommend sticking to the twice a day feedings with All-Purpose flour and wait until you see the starter double predictably. Make sure you're using equal parts by weight of flour, water and starter, but you can reduce the amount of each if you feel like you're wasting too much flour. Check our recipe and blog about Maintaining a Smaller Starter for guidance on how to do this. Normally I don't recommend reducing your starter size until you have a mature starter, but I think you're far enough along in the process at this point. If you feel your starter discard is really more lively than your "main" starter, you could try feeding some of the discard instead. Good luck and let us know how it goes!
