Hi Barb! My starter was sluggish after 6-7 days and I had never seen any rise in the starter, so I tried out the 2:1:1 feeding ratio every 24 hours for a couple days (thank you, comment section) and finally got the starter to rise. I just switched over to the 1:1:1 ratio every 12 hours this morning, and my starter doubled in 4 hours and has been falling back down from it. I got super excited and wanted to try baking right away, but the starter still has a super acidic smell (from the acetic acid growth we have been encouraging, I'm guessing). I'm thinking I should continue feeding at 1:1:1 for a little longer before the starter will be ready. Do I just continue until the smell becomes less acidic? Is there a number of days you recommend I continue feeding at 1:1:1?
