When it doubles in size within 4 hours of feeding. I began a whole wheat flour starter with a 1 cup flour and 1 cup water. I fed it that evening with another cup of each. (Shouldn't have done that). Began feeding with all purpose flour one a day on days 2-4. I was only feeding the 113 g of water and flour I had read somewhere and wasn't discarding any. My starter kept developing liquid on top. I finally began discarding half and feeding twice a day. I was still feeding the 113g of each. My starter was so large that I was severely under feeding. When I weighed it and fed it its weight in flour and water. It doubled ( for the first time ever) in 2 hours. I made bread the next morning which was pushing the 12 hour window. Now my starter has been in the fridge for all of 24 hours and I need to bake more bread. !
