Hi Alicia, I wouldn't be too deterred by the liquid and bad smell, as the sourdough process can have some bumps along the way, but as long as you're not seeing mold or a pink or orange tinge or streak, then I would soldier on. Patience almost always wins out. I don't know what sourdough starter recipe you're following, but here's our recipe. Note that our recipe calls for equal parts by weight of starter, flour and water. If you happen to be doing equal parts by volume, this will result in a very wet starter that may be more likely to separate. If the ratio of ingredients in your starter is similar to ours then it's fine to feed the starter only once a day in the beginning, but once your starter begins to rise predictably then I would recommend feeding twice a day.
