Hi Sarah, I'm not familiar with the recipe you began with, but it doesn't sound like you'll be starting over if you discarded a portion of the starter. Since the ratio of ingredients you used in your last feeding are essentially the same as our sourdough starter recipe (4 ounces each of starter, flour and water), you might want to continue on with our recipe, as if you were on day 3-4. I can't guarantee that it will start rising predictably right away, but this way you won't have to start over! Our recipe calls for starting to feed twice daily on day 3, but if you're not seeing much rising you could continue feeding once a day until the starter begines to rise more predictably, and then switch over to the twice a day feedings.
