Hi there! I’ve been using a different starter recipe that used 4 oz water + 4 oz all-purpose flour Every 24 hours and doesn’t have you start discarding any until it’s ready. For the first 3 days it was bubbling wonderfully, but day 4 I had a centimeter of “hooch” on the top. I discarded all but 4 oz of this starter now and added the same ratio back to it, but does this mean I’m essentially starting over? Can I start changing the recipe now/feeding more regularly now, and if so what should I do differently?
