Hi Barb: I have a starter that I made bread with successfully once. It was in the fridge 7 days and I started feeding it with whole wheat as usual. After 10 days of minor action and doubling it would not float. I then switched to your twice a day feeding with AP flour and got immedient results. Very active and good smell but it still would not float. I was stirring before every feeding. Was that wrong? I tied not stirring the last time and it floated. I have never read anywhere regarding this. Love your attention, thanks for all the time you put into so many questions. Can I switch to a whole wheat blend for the dough and or starter now?
