I did find this recipe online that sounds exactly like your Grandma's, and there are other recipes and blogs on other sites that utilize a potato flake starter, which may give you some visuals of how your starter should look at various stages. As far as storing your starter in the refrigerator, there is no need to poke holes in the lid of your mason jar. I'm sorry I couldn't be more helpful!
