Hi Dan, it sounds to me like your starter is performing nicely, but you do want to continue feeding according to plan at least through day 10. I wouldn't worry about the vinegary smell, as this isn't uncommon. I would just keep feeding twice daily at room temperature. If your starter is rising predictably and has a pleasant aroma you could try baking with it around day 7, but I'd continue the twice a day feedings at room temperature through day 10 for full flavor development.
