I am doing a rye starter and on day 5. Day 1 not much happened, day 2 it well over doubled in size and the last two days it’s fairly close to doubling but a bit below. The discarded starter is bubbly and I noticed initially floats, though didn’t realise the significance of that until reading comments here.

The only smell over the last couple of days is a fairly strong vinegar one... no hooch, no discolouration or moulds but no pleasant fruity or yeasty smells either... I will press on but wondered if anything needs changing due to the smell?
