Hello! I've tried to read through the comments to not pester you with what you've already answered. I am a newbie at this sour dough process and I'm on day 6. I've begun feeding twice a day and before feeding it looks like there's a small layer of 'hooch' on top of my starter each day - but it has not ever risen. The starter had a strong smell the first few days, but now smells nicely of baking bread, maybe? Also, I've been using regular unbleached flour as I have been unable to find whole wheat flour currently. Should I go back to once a day feeding even if there's a lot of hooch on top? Thanks for your advice!
