Hi Leon, the idea when creating this sourdough starter is to begin twice a day feedings after the wild yeast kicks in. It doesn't always happen on Day 3, and sometimes the starter will bubble, but not rise much at all for several days. If this is the case, it's okay to continue with once a day feedings until the starter begins to exhibit a predictable rise. At that point, twice a day feedings are required. Not all sourdough starters are fed this way; particularly if they contain a smaller percentage of starter as compared to flour and water, they may not need to be fed this frequently.
