Hi Chris, I'm so glad to hear your starters are responding well! It takes about 10 days to develop a fully mature starter. Since your starter is rising well and smells good, you could use the discard now if you're itching to go, but I would wait to bake bread until you've seen 2-3 days of your starter rising predictably.
