Hello, I have a doubt of how much tanginess is good for sour dough bread. I am living in North eastern part of India, i e Assam. Here humidity is very high i summers with temperature frm 28 °C to 38°C with 70-80%humilty in air. Last year i made my sourdough which turn bad.
