Hi Irene, try using a razor and moving the blade quickly across the surface of the dough. It really is a quick slash using just the very corner of the blade. The surface of the dough should be on the dry side for easier slashing and to minimize drag. If you want to use your knife, make sure that it is super sharp and use only the very tip. And of course, practice makes better!
