Honestly, the answer to your question is a firm, swift motion and lots and LOTS of practice! Making and scoring a large batch of rolls is a great way to work on your scoring technique when you don't have time to make the dozens of loaves that professionals go through each day. Like sketching a lifelike portrait or throwing a perfect curveball, it's one of those skills that just takes effort and time. Happy baking!
