Gigi, it sounds like you might be mixing your filling just a bit too much in the food processor if it's become gooey or paste-like. If you'd like to try using the cranberry-walnut filling listed here without adding flour, try just briefly pulsing the mixture until it's crumbly. Your double apricot filling sounds lovely; we'll have to give it a try with some fresh lemon zest. Happy baking! Kye@KAF
