Yes, yes, and yes! You're welcome to experiment with different fillings for these cookies, but it should be relatively thin as well as thick. This way the dough will still roll up nicely and stay inside the cookie layers rather than seeping out the sides. It should resemble a thick jam or thin nut butter when it's the right consistency.
