Elaine, our gluten-free all-purpose flour doesn't include xanthan gum, and is designed to be used with gluten-free recipes that include xanthan gum as part of the list of recipe ingredients. Our gluten-free Measure for Measure flour does include xanthan gum, and can be substituted for all-purpose flour in standard recipes (with the exception of yeast recipes) — e.g., recipes not written to be gluten-free.
