I'm not familiar with any baking stores in NYC but you can pickup a pair of kitchen scissors just about anywhere kitchen items are sold. For a lame, you can buy a sharp razor at your local store and either use a wooden chopstick or coffee stirrer to hold the blade (use caution, of course, these are sharp!). There are also plenty of items available online, including this lame at the King Arthur Flour shop. Hope that helps!
