Hi Tulip, check out our recipe for Monkeying Around Bread which is very similar to the last recipe featured, but with cinnamon and sugar coating the dough balls. You could certainly make a version of this type of bread with challah dough. I would be wary of adding too much cinnamon to the dough itself, since cinnamon can inhibit yeast when added in large quantities to the dough (usually a teaspoon of cinnamon or less is okay). You might also consider making this Cinnamon-Apple Raisin Challah bread for your co-worker.
