Hi Lesliesalt! Our Pumpkin Pie recipe calls for a tablespoon of all-purpose flour which may help. Rather than checking for doneness in the middle, we measure the doneness of custard pies by looking at the outside. If the outside 2" are set, (in a 9" pan) it's done, as it'll continue to set when you take it out for about 5 hours.
