Hi Patricia, I would encourage you to cover the dough well between folds. For me this mean covering the bowl with plastic wrap or a bowl cover. Feel free to use enough flour on the table and your hands to make the folds a bit easier, but a high-hydration dough will remain somewhat tacky throughout the process.
