I kneaded my ciabatta by hand, cutting the dough and also allowing it to rest. But I didn't quite get the fancy open crumb I was hoping for. Still, the taste was great and it was fun to slap the dough around. Do you think I would get a better crumb if I took more time for slapping or slapped more energetically?
