If you are from the North how do you know about southern biscuits? My mother never added any kind of oil to her dough and she was form the South for sure. Everyone loved her biscuits and they were good to split open and put a piece of ham or sausage in. We called them mama's greasy biscuits because she added oil to the pan and rolled each biscuit over in it to get a good coat of oil on them. The oil made the crust real crispy and they always rose so pretty. I tried for years to make some like them but never could get them right. By accident I was at my brother in laws house on vacation and he made breakfast and there they were mama's great biscuits. I asked him how he learned to make them and he said my mother had shown him how to make them. You have to use flour that is made from soft wheat that is grown in the south, northern wheat is too hard and will not rise as good. she never used anything but buttermilk and self rising W.R. flour which is made in the south! No oils in her biscuits.Don't mess with the dough too much and just pat it out and cut them out. Mt wife's mother cut baby biscuits out with a shot glass and they are a big hit with kids.
