My baguettes came out pretty hard instead of crunchy and the inside seems to be a little dry. I kneaded the dough for about 15 -20 min to get it to be smooth. Was that too long? Also, after shaping it, I let it rise for about one hour. It was a little puffy, not marshmallow-y" as i dared not go past one hour with fear of over-risen. I did pour boiling water into the cast iron pan, Please advise and thanks
