You can use any type of liquid oil (vegetable, avocado, olive, etc.) to grease. Just make sure that the flavor of the oil doesn't taste weird with a baguette. Also, you can use plastic wrap for covering the bowl, as I find that covering dough with a tea towel makes the surface dry out.
