Great info!! Thank you so much for doing this! I've been reducing sugar in baked goods for a long time, usually anywhere from 25%-50%. I found that the less sugar I eat in general, the less sugar I need to make things taste sweet to me. Our palates really can change. Whenever I see sugar as the first ingredient in a packaged baked good, I know I will find it too sweet so I steer clear.
