Hi Charlie - Don't worry, you're not dumb — this is a little tricky. Simply put, you can cut the sugar in ANY cake recipe: the question is how much. The type of cake recipe that responds best to reducing its sugar is something like carrot cake or apple cake, something with fruit added. Best not to try cutting sugar in angel food cake. For chocolate and vanilla cakes, you can cut sugar somewhat, but not as much as "fruity" cakes. I'd say start by reducing the sugar by 1/4 cup for every cup of sugar in the recipe. So if your cake recipe calls for 1 cup of sugar, try making it with 3/4 cup and see how you like it. Your doctor is the best person to give you advice about whether or not you should be eating cake, and what reducing sugar in cake will do for your health. But if s/he says give it a go, well, now you know where to start. Good luck — PJH
