You bet, Shannon! Divide the dough into 4 portions in step 3 instead of two. Follow the same basic shaping instructions, rolling the dough out into 4 1/2" by 9" (instead of 9" by 18"). Bake the mini loaves in smaller pans (about 3" by 6" is ideal) and bake at 350°F for about 20 to 25 minutes until well-browned and a digital thermometer inserted into the center reads at least 190°F.
