Just made this yesterday. The dough was gorgeous and supple, made the filling sans nuts, put it all together then it went into the fridge overnight. This morning I took it out at 7am and baked it at 9am... I think it should have been a bit warmer as after 50 minutes, my thermapop registered at 195 and I took them out. One started to slump in the middle, and back in the oven it went for another 15 minutes. Lessons learned: bring to room temperature and then wait another hour to be sure. Second lesson take temp in multiple places. Thanks for another great recipe!
