Hi Kelly, this isn't something I've tried, but I suspect it would work as long as your stainless steel pot is suitable for using in the oven at the temperature recommended in the recipe. If your pot requires a lower baking temperature, then let that be your guide. For this type of pot, I wouldn't recommend preheating empty and I would lower the dough into the pot on greased parchment paper right before baking. You can put bread and pot in a preheated oven and remove the lid after 25 minutes. Baking time will likely be a bit different with this sort of pot, so keep an eye on the bread after you remove the lid.
