Hi Kelly! The No-Knead Crusty White Bread is a good option because you can pull off just as much dough as you need. (And even freeze it in a pinch.) The bake time would be shorter of course, (not by a whole lot) but once you've figured out the portion that works best for you, you can note how long it takes that size to bake to 190°F in the middle. You could still use your Dutch oven. A littler loaf will likely be on the flatter side since it won't have the support of the edges in a large Dutch oven. Smaller 2 qt or 3 qt Dutch ovens do exist so that might be a good option longterm.
