Hello! We have another blog, Baking in a cold Dutch oven, that shows the difference between loaves baked in a preheated pot or a cold one. Both methods work. A hot pot gives a better color and crisper crust but some aren't as comfortable handling such a hot dish and would prefer to put the dough into a cool one. Annabelle@KAF
