Hi there, Debby! We're sorry that your second loaf of bread didn't turn out as expected. It sounds like it was over-proofed — most likely the dough rose and fell again before you got back to it. When the dough has been stored in the fridge, it may need a couple hours to come to temperature and rise a bit but not the better part of a day. Dough that has been over-proofed won't brown as much, will be much shorter than expected and may have a dense section towards the bottom that appears under-baked.
