Hi there, Michelle! It's been our experience that those Dutch ovens work well, but we'd suggest double checking with the manufacturer to make sure that the one you have is okay to be heated empty. It sounds like the recipe you've found makes one loaf — if you'd like to make more you can check out our recipe which makes three to four, depending on the size you choose. The rest in the fridge helps to create a nice flavor, but it isn't required to make a good loaf of bread. We hope this helps and happy baking! Morgan@KAF
