I have a recipe for gluten-free walnut shortbread cookies. Since I can't find spelt at my food co-op, I bought buckwheat flour, instead. My questions are: Can I use 100% buckwheat in place of spelt? Or, if I need to replace part of the spelt with another ancient grain, would oat flour work? Would you suggest 25% buckwheat flour? Thanks for your help!
