Hi Mark, the answer depends on how you're feeding/maintaining your starter, as well as how you're using the sourdough starter in the recipe. If you'd like to get a complete estimate of the nutritional information of what you're baking (including any adjustments you might make, like adding sourdough starter), enter the ingredients in the recipe into a free nutritional calculator.
